High-protein chocolate cake

Ingredients

For the chocolate cake:

  • 3 medium eggs (2 egg whites, 1 whole egg)
  • 4 tablespoons sugar-free apple sauce
  • 100 ml almond milk, or cow's milk
  • 200 gram cake flour
  • 125 gram chocolate 
  • 85 gram baking cocoa
  • 1 tablespoon baking powder

Instructions

  1. Preheat oven to 175°C.
  2. Beat two egg whites until stiff. Whisk 1 whole egg with applesauce and almond milk.
  3. Mix flour, protein powder, cocoa and baking powder.
  4. Add wet ingredients and mix briefly but vigorously to form a homogeneous dough. Fold in beaten egg whites.
  5. Pour dough into a small silicone mould and smooth out.
  6. Bake the chocolate cake for about 17 minutes - not too long, otherwise, it will be dry.
  7. Let the high-protein chocolate cake cool. Then decorate with frosting.
  8. To do this, mix the cream cheese with protein powder and cocoa and spread it on the cake. Decorate with berries as desired.
